My great grandma was a collector of cookbooks. I remember their home having a giant floor to ceiling bookcase literally filled with hundreds of cookbooks. As a kid, I never understood how or why someone would have sooo many! Looking back I realize that living nearly your entire life before the invention of the internet would have required a fair amount of recipes if you wanted to never get bored with dinner.
I kept a few of my favorites, ones I saw her use the most and always seem to forget about them until its nesting season. Then I remember my favorite pumpkin cookie recipe. Pumpkin Chip Cookies
1 ½ c. butter
2 c. brown sugar
1 c. granulated sugar
15o.z. Pumpkin
1 egg
1 tsp. Vanilla
4 c. flour
2 c. quick oats
2 tsp. Baking soda
2 tsp. Cinnamon
1 tsp. Salt
2 c. chocolate chips
In a large mixing bowl, cream butter and sugar. Beat in pumpkin, egg and vanilla. In a separate bowl, stir together the dry ingredients. Slowly add to pumpkin batter, mixing well. Stir in oats and chocolate chips. Drop by rounded spoonfuls about 2 inches apart on a cookie sheet. Bake at 350° for 10 to 12 minutes.
